Quick filter to list ungraded assignments
The Canvas Gradebook effective display space is limited. While different screen resolution and monitor size could help with maximising the Gradebook table, depending on the class size, it might be easier to utilise the in-built filters versus excessive scrolling.

The steps below shows how you can quickly identify students which require further action e.g., to grade newly submitted assignment, grade later submission.
Go to Grades > Apply Filters > Submissions > Has Ungraded Submissions

Remarks: The coloured cells define different submission statuses and is automatic. You can customise these colours on a per-course basis. Sample illustration:
